For a complete meal, pair these fries with    homemade beef patties  and create the perfect burger and fries combo!

 Ingredients:


4 large potatoes (brown or golden potatoes are best)

1-2 tablespoons salt (for seasoning and soaking)

1-2 quarts vegetable oil (for frying)

1 teaspoon garlic powder (optional, for added flavor)

1 teaspoon paprika (optional, for color and flavor)

1 tablespoon chopped fresh parsley (optional, for garnish)

Directions:


Prepare the potatoes:


Peel the potatoes (optional if you prefer skinned potatoes).


Slice the potatoes into thin slices, about 1/4 inch thick, for classic potatoes. If you like thicker potatoes, you can slice them a little larger, but thinner potatoes will be more crispy.

Soak the potatoes:


Place the cut potatoes in a large bowl of cold water. Add 1 tablespoon salt to the water and let the potatoes soak for at least 30 minutes, or up to an hour. This helps remove excess starch, making the potatoes crispier.

Dry the potatoes:


After soaking, drain the water and dry the potato slices well with paper towels or a clean kitchen towel. The drier the potatoes are, the more fragile they will be.


Preheat the oil:


In a large pot or deep fryer, heat the oil to 175°C (350°F). Use enough oil so that the potatoes float freely while cooking.


Fry the potatoes (first fry):


Fry the potato slices in small batches to avoid crowding. Fry for 3-4 minutes, until they start to soften but are not yet browned. Remove with a slotted spoon and allow to drain on paper towels.


Increase the heat and fry again (second fry):


Increase the oil temperature to 190°C (375°F).

Fry the potatoes again in small batches for another 2-3 minutes, or until they are golden brown and crispy.

Remove the potatoes and drain on paper towels. Sprinkle with salt immediately, and if desired, add garlic powder and paprika for extra flavor.


Serve the fries hot, garnished with fresh parsley if desired.


Serve with your favorite dipping sauces such as ketchup, mayonnaise, or aioli.


Extra tip:  

 For extra crunch, you can fry the fries a third time for 1 minute, but be sure not to burn them.
