Classic Coffee Cake with Cinnamon Streusel



Here’s a classic Coffee Cake recipe that’s perfect for breakfast, brunch, or a cozy snack with coffee. This cake has a buttery, moist texture with a sweet, cinnamon-sugar streusel topping.

Ingredients:

For the cake:

2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

1 cup sour cream or Greek yogurt

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

                                       

For the cinnamon crumb topping:

1/2 cup brown sugar

1/4 cup all-purpose flour

1 teaspoon ground cinnamon

1/4 cup cold butter, cut into cubes

1/2 cup chopped nuts (optional, such as walnuts or pecans)


Instructions for the Perfect Coffee Cake:

                                        

1. Prepare the oven and baking sheet

Preheat the oven to 175°C (350°F).

Grease a 9×9-inch baking sheet or line it with parchment paper for easy release.


2. Make the streusel topping

In a bowl, combine the brown sugar, flour, and cinnamon. Add the cubed butter, and using a fork or pastry cutter, mix until the mixture resembles coarse breadcrumbs.

Add the nuts, if using, and set the topping aside.


3. Make the cake batter

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

In a large bowl, beat the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, beginning and ending with the dry ingredients. Mix until well combined.


4. Assemble the Cake

Pour half the batter into the prepared pan and spread evenly.

Sprinkle half of the cinnamon crumbs over the batter.

Sprinkle the rest of the batter on top, then sprinkle with the rest of the cinnamon crumbs.


5. Bake the Cake

Bake for 35-45 minutes, or until a toothpick inserted in the center comes out clean.

Leave the cake to cool in the pan for about 15 minutes before cutting into squares.


Serve and enjoy

Serve warm with a cup of fresh coffee or tea, or dust with powdered sugar for a nice finishing touch.
